what would I choose? natural stone or quartz?

I'd go for natural stone, hands down. Call me old school, but as the proud owner of a countertop fabrication business, I've got quartzite and soapstone rocking it in my own kitchen. There's just something about that natural, original stone vibe that tickles my fancy. Sure, there are a gazillion countertop options these days, but let's be honest, most of them are just Chinese knock-offs (no offense, China!) trying to pass as the real deal, and they're not exactly winning any quality awards.
